The Essence of Extrusion
How does grain become light, crispy extruded bread?
In short: water turning to steam and a sudden drop in pressure create the light, porous structure.
- Raw material
- Water
- Heat
- High pressure
- Pressure drop and expansion
From Grain to Crispbread in Six Steps
Cleaning and Milling
We clean the grain and mill it into grits of the right particle size.
Mixing
Freshly milled grains are mixed with the rest of the ingredients.
Into the Extruder
Water is added to the mix, and the screws convey and knead it intensively.
Heat and Pressure
Heat and pressure are applied to the dough for a short period of time, transforming the starch.
Expansion
As the pressure drops dramatically on reaching the die, the water turns into steam, and the material expands and turns airy.
Finishing
The bread is then rolled, sliced, cooled and packed.
What Makes Extrusion Different
Airy Structure
Created by the sudden drop in pressure.
Fast Process
The heat treatment is brief.
No Rising Agent Needed
Neither yeast nor sourdough is needed in the process of extrusion.

The Benefits of Extrusion Technology
Extrusion is a fast, efficient technology that keeps the qualities of the raw materials while producing light, crispy products.
Health
Health-conscious
- Significant proportions of the raw materials are processed and milled on site, right before production.
- May help retain more valuable nutrients and make them easier to absorb.
- Is manufactured without the use of oil or fat.
- No rising agent or preservatives are used.
- A light, crispy texture that is easy to digest.
Environment
A more sustainable alternative to conventional baking
- Efficient, continuous production.
- Little process loss.
- Long shelf life, so less food waste.
- A flat product shape for better pallet use.
- Fewer unnecessary additives.
Energy
Energy-efficient
- The heat treatment is brief.
- Cooking, shaping and puffing in a single process.
- Solar panels installed by Abonett allow the use of renewable energy.
- A fast process that is easy to control.
- Efficient use of energy.
